At this point in my mother's care, I am looking into getting a geriatric care manager to help us plan for when my mother needs to move. How can I start this process?

If you are looking to find a geriatric manager, you should check out the Aging Life Care Association, formerly known as the National Association of Professional Geriatric Care Managers (NAPGCM). On their site, they have an aging life care expert search that will help you find a certified geriatric care manager. If you are looking into senior care options, also look into finding a financial advisor so that you can plan to pay for care.
